Smoked trout, leeks, lemon, cucumber, capers, red onion on a crostini finished with dill   $10

Sautéed Mushrooms and Game

A variety of mushrooms sautéed then finished with madeira cream sauce and a gremolata served in a sizzling iron skillet ~ add a combination of elk, bison, and beef

Duck Cake

Pan-seared duck leg cake combined with bell pepper, onion, panko and spices finished with a chipotle and Flathead cherry aioli   $10

Beef Filet

Cornmeal Crusted Paradise Valley Trout

Roasted rainbow trout encrusted in cornmeal topped with tequila, cilantro, lime crème fraiche served over fingerling potatoes and sweet corn hash   $30

Rough Rider Tenderloin Trio

 Pan seared bison with truffle compound butter, elk with 320 red wine demi-glace and beef tenderloin with a cabernet fig jus served with pine nuts, heirloom tomatoes, and mushroom risotto with seasonal vegetables   $42

New York Strip

Grilled 14oz New York strip with a truffle compound butter sauce served with Yukon gold mashed potatoes and seasonal vegetables   $35

Pasta

Angel hair pasta served with Dailey’s bacon, shallots, garlic, and kalamata olives tossed with pesto and finished with crème fraiche   $26

 Pan seared pork tenderloin dusted in crushed pistachios served with vanilla-carrot puree, sautéed Dailey’s bacon and brussel sprouts finished with an apple-maple glaze   $31
